3 cup medium egg noodles
1 ctn ricotta cheese 15 ounce
1/4 cup parmesan cheese grated
1/2 tsp salt
1 dsh white pepper
2 x eggs well beaten
2 tbl butter or margarine
2 tbl flour
1/4 tsp salt
1/8 tsp nutmeg
2 cup milk
2 cup broccoli, frozen thawed
6 oz Monterey jack cheese sliced
4 oz cooked ham cut in strips
Instructions:
Instructions: Heat oven to 350 . Cook noodles to desired doneness as directed on package. Drain; rinse in hot water. In small bowl, combine ricotta cheese, parmesan cheese, 1/2 teaspoon salt, pepper and eggs; mix well.

Set aside. In medium saucepan, melt margarine. Stir in flour, salt and nutmeg; cook until smooth and bubbly, stirring constantly. Gradually stir in milk; cook until mixture boils and thickens, stirring constantly. To assemble, spread 1/2 cup sauce over bottom of ungreased 9 x 13 baking dish. Place noodles over sauce. Sprinkle with broccoli,. Spoon ricotta cheese mixture evenly over broccoli. Place slices of Monterey jack cheese over ricotta layer. Pour sauce over cheese slices. Bake at 350 for 25 to 30 minutes or until thoroughly heated. Arrange ham on top of casserole in lattice pattern. Garnish with parsley if desired. Let stand 10 minutes before serving. Cut in squares.
