Instructions: Remove the flesh from the melon quarters in one piece and cut widthways into 4-5 slices. Layer the melon with the sliced mango to form a semi circle on four plates.
Divide the prawns into each semi circle of fruit. Mix together the dressing ingredients and pour over one side of the fruit to form an attractive pattern.
