1/3 cup Vegetable Oil
5 x Flour Tortillas -- about 9 inch
14 oz Beans with tomato sauce
2 tsp Chili Powder -- or to taste
1 tsp Oregano
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Cumin
4 oz Jalapeno Chile Peppers -- drained & chopped
1/2 cup Monterey Jack Cheese -- shredded
1/2 cup Cheddar Cheese -- shredded
1 head Lettuce -- shredded
2 med Tomatoes -- chopped
4 tbl Salsa -- or to taste
In a 10 inch skillet heat oil over medium heat. Fry tortillas in hot oil 5 to
10 x seconds each side until lightly browned and blistered. Drain well on paper
towels. Puree beans with sauce in blender with seasonings until smooth. Place

Instructions: Chilies, and 1/4 Mozzarella cheese. Repeat layers 3 more times ending with last tortilla on top. Sprinkle with cheddar cheese. Bake at 375 degrees F, for 20-25 minutes until heated through and cheese melts. Let stand 5 minutes. Garnish with lettuce and tomatoes, then place on warm serving plate. Cut in wedges, serve with taco sauce or salsa and raw vegetable crudites for lunch, or with Mexican rice for a supper dish.
