Instructions: Melt butter in large skillet.
Stir in flour, cook 1 minute. Pour in warm milk gradually, stirring constantly until smooth and thick. Season to taste. Stir in mushrooms, simmer gently until cooked. Makes 3/4 pint NOTES : This is a mushroom sauce for those concerned about eating dishes with a high butter and cream content. This sauce is also delicious with Quenelles.
