NOTE: If you are entertaining and want to add a typical appetizer to this menu, provide plates with slices of fresh white goats cheese (Editors note: Do white goats make different kinds of cheese than black goats?) and jamon serano (cured ham), if available, with a few olives and more crusty bread.
