Instructions: Cut leeks in four, lengthwise. Wash thoroughly until no sand remains between leaves. Cook in salted boiling water for 30 minutes, or until leeks are very tender.
Place leeks in salad bowl. Pour vinaigrette over leeks. Sprinkle with parsley. Serve warm or cold. Comments: "Leek salad" is called in France "the poor mans asparagus" - but there are many who prefer it to the "rich mans" variety. It is fresh and delicious. Email this Recipe:
