2 tsp Olive Oil
2 lrg Leeks White Only
Rinse, Slice In Very Thin Rings
4 lrg Shallots Minced
4 x Cloves Garlic Minced
1 cup Dry White Wine
5 cup Nonfat Chicken Broth Or
Lowfat Beef Broth
1 x Bay Leaf
1 tsp Dried Basil
Fresh Ground Pepper
Instructions:
Instructions: Heat the oil in a stockpot over medium-high heat. Add the leeks, shallots, and garlic and saute for 5 minutes. Add the wine, broth, bay leaf, and basil and bring to a boil. Lower the heat and simmer for 20 minutes. Remove the bay leaf, season with pepper and salt, and serve.
