Instructions: Melt butter in saucepan over medium heat.
Add leeks onion garlic thyme and potato and stir. Cover and simmer for 10 minutes stirring occasionally. Add broccoli and cook for further 6 minutes. Spoon vegetables into liquidiser and mix to smooth puree. Slowly add cooking liquor until combined. Season to taste. Meanwhile fry bacon in hot dry pan. When fat has been released add shallots and sugar and cook until soft. Serve a spoonful in each bowl of soup. serves 4 Email this Recipe:
