12 x egg whites
1 tsp cream of tartar
1/4 tsp salt
1/4 cup sifted powdered sugar -- divided
1 tbl grated lemon peel
3 tbl fresh lemon juice
1/4 tsp vanilla extract
Instructions:
Instructions: Beat first 3 ingredients at high speed with an electric mixer until foamy.

Add 3/4 cup powdered sugar, 1 tablespoon at a time; beat until stiff peaks form.

Fold in lemon peel, lemon juice and vanilla. Combine remaining 1/2 cup powdered sugar and cake flour; gradually fold into egg white mixture. Spoon batter into a 10 inch tube pan. Bake at 375 degrees F. for 35 to 40 minutes or until golden.

Invert pan on a wire rack; cool completely.

Yield: 1 cake
