Instructions: Peel and wash the potatoes, cut them lengthwise into quarters and place them
In a bowl. Pour the lemon juice over them and toss. Add the salt, pepper, minced garlic, oregano and oil. Mix well and marinate for at least 1 hour. Preheat oven to 425 degrees. Arrange the potatoes in one layer in a 9-by-12 inch baking pan. Pour the marinade over the potatoes and sprinkle paprika on top. Cover the pan and put on the lower rack of the oven. Bake 25 minutes. Uncover and bake another 30 minutes or until the potatoes are tender and crispy on top. Serve hot. Note: Small red potatoes can be substituted for the russets. If using small or medium potatoes, peeling is optional. Score the red potatoes in several places so the spices can penetrate, giving a tastier potato. If using large red potatoes, cut them in half or in thirds. Email this Recipe:
