juice and grated rind of 1 lemon
2 tbl olive oil
2 tbl rice vinegar
1 oz fresh basil, chopped
1 oz fresh cilantro or parsley, chopped
1/4 cup pine nuts, toasted
1/4 cup shredded Parmesan cheese
2 x Roma tomatoes, diced
Instructions:
Instructions: Mix all ingredients and chill well.
