2 tsp butter or margarine
1 x clove garlic, minced
3/4 lb sugar snap peas, about 4 cups
1/2 cup no fat chicken broth
2 tbl lemon juice
2 tsp dried basil
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
1/2 cup uncooked couscous
Instructions:
Instructions: In large nonstick skillet melt butter over medium-high heat. Add garlic; cook, stirring, 30
seconds. Stir in snap peas; cook 3 minutes. Stir in broth, lemon juice, basil, cumin, salt and pepper. Bring to a boil. Stir in couscous; remove from heat. Cover; let stand 5 minutes. Stir in zest; serve. 6 servings
