2 x lemons
2 cup water
1 cup sugar
2 x egg whites
2 tbl arrowroot
Instructions:
Instructions: Blend arrowroot with a little cold water.

Wash lemons and grate rind.

Place lemon rind and juice, sugar, and water into a saucepan and bring to boil. Whisk in the dissolved arrowroot, bring to a gentle boil and stir for 3 minutes.

Separate the eggs. Beat egg whites until stiff.

Pour hot mixture over them, beating well.

Pour into moulds and allow to set in the refrigerator,

Serve with cream or custard.
