Ingredients:

700 gm chicory (ie 4 good sized beads)
zest and julce of 1 large lemon
1 x tabklepoon brandy
6 tbl olive oil
1 x clove of garllc crushed
Instructions:
Instructions: Prepare the chicory heads by cutting them in half lengthways.

Then using a sharp knife cut out an inverted v from the core at the base of the heads.

Now heat 1cm of boiling salted water in a pan which is large enough to take the chicory in a single layer.

When you have added them bring them back to the boil cover and simmer gently for 810 minutes.

Now drain them thoroughly in a colander and then return the chicory to the hot pan and add the rest of the ingredients.

Cover the pan and heat for a few moments just enough to allow the ingredients to heat through and permeate the chicory.

Serve with grilled chicken and possibly a new potato or two.
