Ingredients:

1 x Lemon , rind of
2 cup Flour
1/4 cup Sugar
2 tsp Baking powder
1/3 cup Butter
1/2 cup Heavy cream
1 x Egg
Instructions:
Instructions: Stir together flour, sugar, baking powder and rind.

Cut in butter until resembles coarse crumbs. In small bowl, mix cream, eggs, and vanilla.

Add to flour mixture. Knead the dough (it will be sticky).

Pat dough into 1/2 inch thickness. Cut with small round glass. Place on cookie sheet sprayed with a non-stick spray.

Bake in a 400 F oven for 10-15 minutes.

NOTE: I think 1/2 inch is too thin. Next time I make them, Ill use a glass and make them at least 1-1/2 inches thick. ALSO, I added 1/2 teaspoon lemon flavoring (real, not imitation!)
