56 gm caster sugar
28 gm margarine

112 gm margarine
2 x egg
168 gm selfraising flour
Instructions:
Instructions: Method
1. Place rind juice sugar and margarine cut into pieces in the bottom of a pie dish.

2. Stir in the lightly beaten egg.

3. Cream together margarine and sugar until light and fluffy.

4. Beat in the eggs.

5. Gently fold in the flour and enough water to make a smooth consistency.

6. Smooth sponge over lemon base.

7. Place in preheated oven until sponge is set and golden brown.

small oven: 180 degrees C approx 40 minutes PREHkATED bottom shelf
fan oven: 170 degrees C 40 minutes
