Instructions: Scrub the sweet potatoes, place on baking sheet and bake in a hot oven 375 degrees F. or zap in the microwave until tender when pierced with a sharp knife.
Cut the sweet potatoes in half and scoop out the meat with a spoon. Place in a bowl and mash with a fork or potato masher. Add the lemon juice, zest, and olive oil, season with salt and pepper. Place in a heatproof bowl over a pot of simmering water to keep warm. Or place in an ovenproof dish and return to oven to keep warm. Yield: 4 servings. Email this Recipe:
