Instructions: Preheat oven to 325 degrees. Clean chicken. Cut 1 lemon into quarters and 1 lemon into thin slices. Place quartered lemon and garlic inside cavity of chicken. Place sliced lemon under skin of chicken breast. Season with salt and pepper. Place chicken in oven and roast for 15-20 minutes per pound, basting periodically with chicken juices.
