Instructions: Place sugar, water and wine in a small pan and bring to the boil,stirring until sugar dissolves. Reduce heat and simmer 10 minutes. Allow to cool. Place in a bowl with lemon juice and freeze until almost set. Whisk regularly to ensure a smooth ice is obtained.
When almost set, fold in stiffly beaten egg whites, whisk well and freeze until firm. The more you whisk the mixture while it is freezing, the smoother the gelati will be. An ice cream machine is ideal if you have one. Email this Recipe:
