Instructions: Sift flour, baking powder, baking soda and salt. Set aside. With an electric mixer cream softened butter and sugar until light and fluffy.
Add crystallized ginger and eggs; beat until blended and volume doubles. Alternately stir milk and flour into mixture, beginning and ending with milk. Stir in lemon oil. Fill muffin cups 3/4 full. Bake on middle rack of 325 deg F oven until golden brown, about 20 - 25 min. Makes 12 regular muffins. Email this Recipe:
