1/4 cup fresh-squeezed lemon juice
1/4 cup peanut butter
6 tbl olive oil
1/4 cup rice vinegar
1/4 tsp salt
Instructions:
Instructions: MAKES 1 CUP. VEGAN

Combine all ingredients in blender; whirl until smooth. Stir before using.

Makes 1 cup.

Note: Vinaigrette can be made ahead of time and refrigerated.
