1 x 9" deep-dish pastry pie shell
4 x eggs lightly beaten
6 tbl butter softened
1 cup light corn syrup
1/2 cup brown sugar packed
2 tsp lemon rind grated
1/4 cup lemon juice
3 tbl all-purpose flour
1/4 cup pecans coarse chop
Instructions:
Instructions: Bake pastry pie shell at 450F for 5-7 minutes. Remove from oven and cool crust completely.

Combine eggs and next 6 ingredients; stir in pecans and pour into prepared crust. Bake at 350F for 40 minutes, shielding edges with strips of aluminum foil after 25 minutes to prevent excessive browning.

Cool on a wire rack. Serve with whipped cream! Rita Taule
