4 x ripe pears
1 x lemon
300 ml dry white wine
115 gm caster sugar
1 x cinnamon stick
225 gm blackberries
4 scoop vanilla ice cream
Peel and core the pears keeping them intact.
Instructions:
Instructions: Squeeze the juice.

Bring wine sugar juice zest and cinnamon stick to a gentle boil stirring until sugar has dissolved then increase heat and boil until thickened about 5 minutes.

Add pears cover and poach gently for 10 minutes until just tender turning occasionally. Remove and leave to cool.

Boil the liquid to reduce remove cinnamon stick and pour the syrup over the blackberries.

Leave to cool.

To serve fill each pear with ice cream arrange on a plate and pour some blackberry sauce around.

Serves 4
