1/4 cup all-purpose flour
1/2 cup cornstarch
2/3 cup granulated sugar
1 tbl poppyseeds
1/4 tsp baking powder
1 tsp salt
2 tbl butter
1 cup skim milk
2 tsp lemon zest (grated lemon peel)
1/2 tsp vanilla
Instructions:
Instructions: Preheat oven to 350 degrees. Grease and flour an 8 x 2 inch cake pan. Put butter out to soften to room temperature.

In a bowl, whisk together flour, sugar, cornstarch, poppyseeds, baking powder, and salt. With fingers, blend in butter until incorporated.

In large measuring cup, lightly beat together milk, lemon zest, vanilla and egg.

Stir milk mixture into flour mixture until just blended.

Pour batter into greased and floured cake pan. Bake for 35 minutes or until tester comes out clean. Remove cake from pan and cool on rack.

NOTES : I love this recipe. Its easy to make, its very good - sweet but not too sweet, and it doesnt seem as though it has an excessive amount of calories.
