Instructions: Set the oven at Gas Mark 4/350F/180C.
Beat the butter and sugar together with the lemon rind until light and fluffy. Add the egg yolks beating well then gradually stir in the sifted flour and baking powder alternately with the lemon juice. Gradually beat in the milk and water (the mixture will look curdled at this stage). Whisk the egg whites stiffly and fold in quickly. Pour the mixture into the prepared dish. Stand the dish in a bainmarie (a roasting tin filled 1cm deep with hot water) and bake for 50 to 60 minutes until puffy and golden. The lemon sauce will form below the sponge top.
