Instructions: Preheat oven to 375F.
In a 8 inch square non-reactive baking dish toss all ingredients together. Cover tightly with foil and roast for .about 40 minutes, or until the vegetables are soft. Shake or stir occasionally. NOTES : We had this for dinner last night. It was originally posted to this list years ago by Ann Cornellier. I added the carrots, increased the garlic, and omitted the 1/4 tsp sugar from the original. It was a nice accompaniment to the lentil and bulgur stew (which Ill post later). Tonight the chilled left-overs go in a salad with Romaine lettuce. I think Ill dress it with that Japanese Carrot Salad Dressing. Email this Recipe:
