1/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup butter or margarine
1 cup sugar
1 tsp lemon peel -- shredded
1 tsp vanilla
2 x eggs
1/4 cup milk
Instructions:
Instructions: Grease and flour 9x9 pan. Beat butter on medium speed for 30 seconds. Add sugar, lemon and vanilla; beat til blended. Add eggs separately, beating well after each. Add flour and milk alternately. Beat on low speed after each addition til combined. Stir in carrot. Pour batter into pan. Bake at 350 for 30 minutes. Cool cake in pan on rack. Spread cooled cake with Lemon Frosting.

Makes 9 servings.
