Instructions: Mix together the potato, fish, parsley, lemon, 1 egg yolk and seasoning to taste. Chill the mixture for easier handling.
Shape the mixture into 8 sausage shapes using well floured hands. Beat together the remaining egg and egg white and use to coat the shapes. Coat evenly with the breadcrumbs, then fry in batches in a little oil for 6-8 minutes, turning occasionally until crisp and golden. Drain on kitchen paper and serve immediately with lemon wedges and tartare sauce. NOTES : Delicious crunchy sticks of potato and fish with a twist of lemon. Ideal served with a tartar-sauce.
