Instructions: Dice onion, bacon, celery, carrots and tomatoes.
Melt butter in a large pan, cook garlic, onion, celery, carrot and bacon gently for 4 minutes. Add lentils, corn, tomatoes and stock, bring to the boil, simmer 20 minutes, or until lentils are tender. Add parsley and seasoning, simmer 2 minutes and serve. Email this Recipe:
