8 oz lentils - (abt 1 cup)
1 tbl vegetable oil
1 x onion chopped (abt 1 cup)
1 lrg green pepper seeded, chopped
1 x carrot peeled, diced
8 oz kielbasa sausage sliced
1 can stewed tomatoes - (8 oz)
1 tbl white vinegar
1/4 tsp salt
Instructions:
Instructions: In a medium saucepan, combine lentils and 3 cups water; bring to a boil over medium-high heat. Reduce heat to low; cover and simmer about 20 minutes, or until lentils are tender. Drain and set aside.

Meanwhile, in a large skillet, heat oil over medium heat. Add onion, green pepper, and carrot; saute 5 minutes.

Add kielbasa sausage; saute 5 minutes longer. Stir in tomatoes; cover and simmer 5 minutes more. Stir in lentils, vinegar, salt, and pepper until well mixed. Cook until heated through.

This recipe yields 4 servings.

Comments: Kielbasa (also called kielbasy or Polish sausage) paired with some quick-cooking lentils is a new twist on an old favorite - those franks and beans you enjoyed as a kid!
