Instructions: In a medium saucepan, combine lentils and 3 cups water; bring to a boil over medium-high heat. Reduce heat to low; cover and simmer about 20 minutes, or until lentils are tender. Drain and set aside.
Meanwhile, in a large skillet, heat oil over medium heat. Add onion, green pepper, and carrot; saute 5 minutes. Add kielbasa sausage; saute 5 minutes longer. Stir in tomatoes; cover and simmer 5 minutes more. Stir in lentils, vinegar, salt, and pepper until well mixed. Cook until heated through. This recipe yields 4 servings.
