Ingredients:
Amount Ingredient
1 x onion chopped
2 x garlic cloves crushed
2 x carrots coarsely grated
2 x celery stalks chopped
3 tbl Olive
2/3 cup lentils red
1 can chopped tomatoes (14 oz.)
2 tbl tomato paste
2 cup Vegetable Broth
1 tbl fresh marjoram chopped or 1 teaspoonp dried marjoram
Instructions:
Instructions: In a large saucepan, gently fry the onion, garlic, carrots and celery in the oil for about 5 minutes, until they are soft. Add the lentils, tomatoes, tomato paste, broth, marjoram and seasoning. Bring the mixture to a boil then partially cover with a lid and simmer for 20 minutes until thick and soft. Serve over pasta, and use the marinara sauce as required.

Makes 6 servings.
