Ingredients:
Amount Ingredient
250 gm lentils
4 x tomatoes
1 x onions, medium
125 gm bean shoots
2 stk celery
1/10 tsp cumin, ground
1 tbl coriander
----------------- DRESSING: ----------------
1/4 cup sunflower oil
1/2 tsp sesame oil
1 tbl soy sauce
1 tbl lemon juice
1 tsp garlic, crushed
1 tsp ginger, crushed
1/2 tsp honey
1/10 tsp chilli paste
Instructions:
Instructions: Cover the lentils with boiling water and leave to soak for 20 minutes. Drain, place in a pan and cover with cold water. Bring to the boil and simmer for 20 minutes until softened. Drain well and place in a bowl. Pour over the dressing and mix well while still warm. Leave to cool.

Dice tomatoes, onions, celery.

Add the remaining ingredients to lentils, season with cummin, salt and pepper to taste, and toss thoroughly. Transfer to a serving dish.

Dressing:
Put all ingredients in a screw topped jar and shake well to blend before using.
