Ingredients:

10 oz (about 1 1/4 cups) dried red lentils
1/4 cup bulgur wheat
1/2 qt reduced-sodium chicken or vegetable broth
1 med onion, peeled and very finely chopped
1 tbl tomato paste diluted in 1/4 cup water
2 tbl unsalted butter or olive oil
About 1/2 teaspoon salt, or to taste
1 tsp sweet paprika
1 tbl dried mint
Instructions:
Instructions: Rinse the lentils and bulgur. Put into a 5- to 6-quart pan, adding the broth, onion, diluted tomato paste, butter and salt. Bring to a boil over high heat, stirring well. Reduce heat to medium-low and simmer, stirring occasionally, about 40 minutes. The lentils and bulgur should be tender and the soup should have a creamy consistency. Stir in the paprika, mint and a little pepper. Simmer five minutes. Taste, adjust seasonings if necessary and serve.

Serves 4 to 6
