Ingredients:

1 x yellow onion, chopped
2 stalk celery, sliced
2 x cloves garlic, minced
1 x green pepper, chopped
6 cup water
1 cup barley
1 cup lentils, dried
1 x carrot, scrubbed & shredded
2 cup tomato sauce, low-sodium
2 tbl cider vinegar
2 tbl soy sauce, low-sodium
1 tsp dried basil
1/2 tsp dried marjoram
Instructions:
Instructions: Saute the onion, celery, garlic, and green pepper in a small amount of water until softened. Add the 6 cups of water and the barley and lentils. Bring to a boil, reduce heat, stir, cover, and cook for 30 minutes. Add the remaining ingredients, stir cover, and cook for 30-40 minutes. If serving over potatoes or rice, serve immediately. If serving by itself, let it sit 10 minutes. The stew will thicken as it sits.
