Ingredients:

3 tbl olive oil
1 lrg Onion chopped
1 x green bell pepper chopped
3 x cloves garlic minced
8 cup water
3 x 8 oz cans tomato sauce
1/2 cup lentils
1 cup brown rice
1 cup dry white wine
3 x carrots sliced
3 x celery stalks sliced
2 lrg red potatoes diced
2 x zucchini sliced
1 tsp dried thyme crumbled
Instructions:
Instructions: Heat oil in heavy large saucepan over medium-high heat. Add onion, bell pepper and garlic, saute until tender, about 5 minutes. Add remaining ingredients. Cover and simmer until lentils and rice are tender and soup is thick, about 1 hour 15 minutes. Season with salt and pepper, to taste.
