Ingredients:
Amount Ingredient
220 gm split yellow lentils (toor dal) washed and drained
1 tsp chilli powder
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp sugar
1 tsp citric and
4 tbl sunflower OR 1 teaspoon black mustard seeds
1/2 tsp fenugreek seeds
10 x curry leaves
salt
----------------- For the dough: ----------------
150 gm wholewheat flour
2 tbl sunflower oil
1 tsp turmaic powder
1 tsp chilli powder
Instructions:
Instructions: Simmer the lentils in water until soft.

Stir in the powder spices salt sugar and citric add.

Heat the oil in a small pan and add the mustard seeds.

When they pop add the fenugreek and curry leaves.

Fry for a minute and pour over the dal.

Make the dough by kneading all the ingredients with some water.

Roll out thinly and cut into diamond shapes with a sharp knife.

Set the lentils to boil and add the dough shapes one at a time.

Simmer for 10 minutes.

Serve hot gamished with coriander leaves.

Eaten with rice it comes from one of the best restaurants in Gujarat.
