1 pkt of pizza crust mixed, prepared acc. to
directions (you could, of course, use homemade)
1 cup walnuts, toasted and finely chopped
1 x tomato, thinly sliced (more if you like a thicker pizza)
1/2 cup of feta cheese, crumbled finely
5 x -6 cups of FRESH spinach
1 pkt of fat free mozzarella cheese, shredded (you cant tell its fat free in this recipe!)
3 x -4 garlic cloves, minced or freshly pressed
1 x -2 cups of spaghetti/pizza sauce
Instructions:
Instructions: Heres how I do it (Im a thin crust lover!) Prepare the crust according to directions, stretch it out very thin, and PRE-BAKE until it has turned golden on the bottom and edges - we dont want the crust to be soggy! Spread spaghetti sauce over the crust. Add tomatoes in one layer (or more, if you like), followed by the fat free mozzarella. Quickly (key word is FAST) saute the spinach in a pan with a little olive oil and the garlic cloves. You want the spinach to turn darker green, but not to wilt like the canned stuff. Chop it up, and toss that on the pizza. Sprinkle the feta on the top, followed by the walnuts and the parmesan. Bake until the cheese starts to brown.
