250 gm unsalted butter
250 gm caster sugar
1 tsp vanilla essence
2 x lemons, zest of
1/2 cup flour
2 tsp baking powder
400 gm dried fruit
4 tbl liquid
Instructions:
Instructions: 1. Pre-heat oven to 180deg.C. Line a 20-23 cm square cake tin with Glad Bake.

2. Cream the butter, sugar, vanilla and zest until light and fluffy. Add the eggs one at a time, beating well after each addition. Fold in the flour alternately with the juice, then finally add the fruit and nuts and mix through.

3. Spoon mixture into prepared tin and smooth the surface. Bake for 50 minutes or until the cake is golden and cooked when tested with a wooden skewer.

Remove from oven and cool on a wire rack.

Variations 1. Brown sugar can be used for a darker colour of cake.

2. Orange zest can be used instead of or with the lemon zest.

3. For a lighter texture, some self-raising flour can be used - up to 1 cup sr flour to 1 1/2 cups plain flour.

4. The liquid can be lemon or orange juice, milk, rum, brandy, sherry, orange-flavoured liqueur, or a combination of these e.g. 2 tablespoons orange juice and 2 tablespoons rum.

5. The dried fruit can be a packet of dried mixed fruit or any combination of dried fruits weighing up to 400g. For a traditional sultana cake, a combination of sultanas and cherries is good.

Another combination is chopped apricots and sultanas with orange zest and juice; dried or dessert figs can also be used with apricots for a good flavour. Glace fruit can be used.

6. Jam or marmalade can be added - about 2 tablespoons. The flavour should be complimentary to the ingredients e.g. if apricots are used in the mixture, then use apricot jam. When using marmalade, use one that is fine cut.

7. The nuts can be almonds, brazil nuts, macadamias or pecans. The macadamias can be roasted before using in the cake. Rather than using the nuts in the cake, they can be placed in a layer on top before baking.

8. Desiccated coconut can be added - about 1/3 cup.

9. When the cake is remove from the oven, it can be brushed with liquid whilst still hot to add more flavour e.g. the same liqueur as used in the mixture, warmed and sieved apricot jam or marmalade.

10. Spice can be added to the flour e.g. 1 teaspoon of mixed spice.
