Ingredients:

220 gm plain flour
2 tsp baking powder
3 x heaped tsps ground ginger
1 tsp ground cinnamon
2 tbl ground almonds
110 gm butter
2 x rounded tbsps golden syrup
2 x rounded tbsps black treacle
2 tbl dark brown sugar
2 x eggs beaten
1 tsp bicarbonate of soda
90 ml warm milk
175 gm chopped stem ginger in syrup
Instructions:
Instructions: Preheat Uhe oven to 180 degrees C/350 degrees F/gas mark 4. Butter and line a 20cm loaf tin.

Sieve the flour baking powder and spices.

Stir in the almonds.

Melt the butter syrup treacle and sugar in a small pan.

Stir in the spiced flour.

Mix well but gently.

Remove from heat and stir in the beaten egg.

Dissolve the bicarbonate of soda in the milk and add to the mixture with ginger and raisins Pour into the loaf tin and bake for 45-50 minutes.

Cool before serving.

Serves 6
