2 cup skim milk
1/3 cup uncooked regular grits
1/2 tsp salt
3 x room temperature eggs separated
Instructions:
Instructions: Combine milk, grits and salt in a heavy 3-quart saucepan. Bring to a boil; reduce heat, and cook, stirring constantly, 10 to 12 minutes or until very thick.

Beat egg yolks until thick and lemon colored. Gradually stir about one-fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly. Beat egg whites until stiff peaks form; fold into grits mixture.

Coat a 1-1.2 quart casserole with cooking spray; spoon grits mixture into casserole. Bake at 375F for 35 to 40 minutes or until lightly browned.
