Ingredients:

8 oz linguine -- uncooked
4 x chicken breast halves without skin -- boneless
1 tsp salt
1 tsp ground black pepper
2 tbl olive oil -- divided
2 tbl minced garlic
2 tbl chopped shallots
1 lrg tomato -- diced
1 x red bell pepper -- cut into thin strips
1 x green bell pepper -- cut into thin strips
1/2 cup kalamata olives -- pitted
2 tbl chopped fresh thyme
2 tbl chopped fresh basil
Instructions:
Instructions: Cook pasta according to package directions; drain.

Sprinkle chicken with salt and pepper. Cook chicken in 1 tablespoon hot oil

In a large skillet over medium-high heat 5 minutes on each side or until done. Remove from pan; keep warm.

Saute minced garlic and chopped shallots in remaining 1 tablespoon hot oil in skillet until tender. Add tomato and next 5 ingredients; saute just until thoroughly heated.

Stir in pasta and broth; cook, stirring often, until thoroughly heated. Top with chicken.

Yield: 4 servings.
