Ingredients:

1 lb lean ground turkey
1/4 cup chopped onion
2 x cloves garlic -- minced
6 oz tomato sauce
1 tsp chiles -- bottled, chopped
2 tsp chili powder
1 tsp fresh lemon juice
1/2 tsp ground black pepper
1/4 cup frozen green peas -- thawed
4 x corn tortillas
2 oz lowfat mozzarella cheese -- shredded
Instructions:
Instructions: Mix ground turkey, onion and garlic and place in a 2-quart casserole.

Microwave on High 4 to 6 minutes, stirring, until turkey loses pink color.

Drain.

Stir in tomato sauce, chilies, chili powder, lemon juice, and pepper, and microwave on High another 4 to 6 minutes, stirring mid-cycle. Stir in peas.

In 1 1/2-quart casserole or baking dish, layer tortillas, turkey mixture, and cheese alternately, topping with some of the cheese and dash of cayenne.

Microwave on High 2 to 3 minutes until cheese bubbles. Let stand a minute or so before serving.

Yield: 6 servings.

If you are microwave challenged, perform the first two steps in a skillet until desired results are achieved, then bake the assembled casserole in a 375 degree F. oven until cheese bubbles and dish is heated through, about 10 to 20 minutes.
