Vegetable cooking spray
4 oz fresh shiitake mushrooms -- sliced
1/4 cup green onions -- sliced
1 cup fresh spinach -- torn
1 cup plum tomatoes -- seeded and diced
1/4 cup fresh parsley -- minced
2 tbl low-sodium chicken broth
3 oz linguine -- uncooked
Instructions:
Instructions: Coat a large nonstick skillet with vegetable cooking spray; place over medium-high heat until hot. Add mushrooms and green onions; saute 3 minutes.

Add spinach, tomato, parsley, and chicken broth; cook 1 minute. Set aside and keep warm. Cook pasta according to package directions, omitting salt and fat; drain. Place pasta in a large bowl; add cheese, tossing well. Add mushroom mixture and toss gently. Serve immediately.

Yield: 2 servings.
