Instructions: Place the chicken in a shallow baking dish.
Mix together the lime zest and juice garlic bay oil and plenty of salt and pepper. Pour onto the chicken spooning all over. Cover and leave somewhere cool for 12 hours. Place the dish in a preheated oven (190C/375F/Gas Mark 5) for about 20 minutes or until cooked through basting regularly. Test by piercing the thickest part with the tip of a sharp knife the juices should run clear. Serve the chicken warm with plenty of the juices poured over. I recommend Piper Farm chicken: reared slowly then hung for up to 2 weeks the meat has a moist firm texture and lingering flavour that is never found in intensively reared chicken.
