Ingredients:
Amount Ingredient
30 ml Olive oil, (2tbsp)
5 ml Clear honey, (1tsp)
Juice and zest of 1/2 lime
1 x Clove garlic, crushed
1/2 x Cm, (1") piece root ginger, peeled and finely grated
15 ml Fresh coriander, finely chopped (1tbsp)
Instructions:
Instructions: Salt & freshly ground black pepper 4 red sea bream steaks - each weighing - approximately 175g - (6oz)

Mix together all the ingredients except the fish.

Place steaks on a foil-lined grill rack. Spread one side of each steak with half the lime mixture.

Place under a preheated medium grill for 5-6 minutes. Turn steaks over, spread with remaining mixture and grill for a further 5-6 minutes or until the fish is cooked. This dish needs only simple accompaniments such as new potatoes and a green vegetable.

NOTES : The fragrant lime mixture caramelises slightly on the underside leaving the fish moist underneath.
