Instructions: Place the ribs in a shallow, non-reactive pan thats just large enough to hold them. Put the lime juice, jalapenos, garlic, marjoram and vegetable oil in a blender or food processor and puree. Pour the marinade over the ribs. Cover and marinate for several hours or overnight, turning the ribs once or twice.
Preheat the oven to 350 degrees. Place the ribs on a rack in a shallow roasting pan and bake for 1 1/2 to 2 hours, basting with the marinade every 20 minutes. Turn the ribs after the first hour. When theyre thoroughly browned and crisp, cut them apart, if necessary, and serve. Note: Wear gloves when handling fresh, canned, dried or pickled chilies; the oils can cause a burning sensation on your skin. Email this Recipe:
