Instructions: In a large pot bring 5 qt. salted water to a boil.
Cut the sole fillets into pieces 2 inches long and 1/2 inch wide; set aside. In a large frying pan, heat the olive oil over medium heat. Add the bacon and fry, stirring occasionally, until crisp, about 5 minutes. Add the fish to the frying pan and fry for about 2 minutes. Add the tomatoes and cook over medium heat, stirring occasionally, for 5 minutes. Season to taste with salt and pepper. Meanwhile, add the linguine to the boiling water and cook until barely al dente. Drain the pasta and transfer it to the frying pan containing the tomato sauce. Cook over medium heat, stirring gently, for 2 minutes. Arrange the pasta on a warm platter and serve at once. Fat. NOTES: Fresh cod fillets or whole peeled shrimp (prawns) may be used instead of the sole. Email this Recipe:
