1 tbl olive oil
1/2 cup minced onions
2 clv garlic, minced
1 lb Brussels sprouts, trimmed of stems and minced
1 lrg carrot, finely chopped
1/2 cup water
1 x red bell pepper, seeded and minced
1/2 tsp salt
Instructions:
Instructions: In a large skillet, heat the olive oil over medium heat. Add the onions, sauti them, stirring frequently for 5 minutes or until they have softened.

Add the garlic, Brussels sprouts and carrot to the onions. Add the water and simmer the vegetables, stirring occasionally, about 5 to 8 minutes or until the water has completely evaporated. Then stir in the bell pepper, salt and black pepper. Sauti the hash another minute and serve.

Serves 4.
