Instructions: Cut the liver into pieces and puree in an electric blender or put through a mincer using the finest blade.
Heat the oil in a pan and fry the bacon and onions until golden. Add the flour and cook for 2 minutes stirring. Pour in the stock gradually stirring constantly. Simmer for 5 minutes. Add the tomato puree liver bay leaf and garlic. Season with salt pepper and oregano. Simmer for another 5 minutes then add the chopped parsley. Serve with pasta or rice. Email this Recipe:
