1 x onion, finely sliced
6 tbl extra virgin olive oil
12 oz lambs liver, cut into thin strips
seasoned plain flour
2 tbl balsamic vinegar
sea salt
freshly ground black pepper (or I use a mixture of black and rose)
Instructions:
Instructions: Fry onions gently until beginning to brown. Dust liver with flour, shake off excess and put into pan, increasing heat and cook for 2 minutes, turning continuously. Add balsamic, salt and pepper and cook until to your taste - we only cook for a further minute and then serve, sprinkled with chervil.

We eat this with rosemary garlic potatoes - cut potatoes into small chunks and saute in oil in the oven, with sprigs of fresh rosemary and cloves of garlic.
